The roasting process allows the aroma and flavors trapped in the raw coffee to be released. Coffee is stored raw and this is because quality and flavor are not lost when stored this way. Raw coffee does not have any of the characteristics of roasted coffee. It has a grass-like fragrance and is soft.
The roasting process brings the raw coffee beans to very high temperatures very quickly, causing chemical changes to occur in the beans. When the peak of perfection is reached, they are quickly cooled to stop the process. Roasted beans smell like coffee and their weight is reduced as the moisture inside the beans is removed from the beans during the roasting process. They are ready to be ground and infused. Once the coffee is roasted, it should be consumed as soon as possible so that the fresh flavors are not lost.
Those dealing with coffee roasting generally give special names to their products and roasting styles, so a complete standardization cannot be achieved. This may cause confusion for coffee buyers, but we can group coffee roasting types under four categories, regardless of the name. These are called light, medium, medium-dark, dark roast.
Many coffee drinkers think that the strong and rich flavors of dark roast coffees are related to a higher caffeine level. In reality, coffees roasted with a light roast style have a slightly higher caffeine content.
Although the perfect roasting style depends on personal preferences, it is also affected by conditions such as national preferences and geographical location.

Light Roast Roasting Styles
After roasting in this style, which is preferred for softer coffee types, the color of the coffee becomes light brown. There is no oil on the surface of the beans because the beans have not been roasted long enough for the oils to rise to the surface.

Medium Roast Roasting Styles
With stronger flavors and a lean surface, these beans have a medium brown color. It is also called the American style because it is mostly preferred in the USA.

Roasted beans with a medium-dark style that leaves a bittersweet flavor on the palate have a rich flavor, dark color and a little oil on their surface.

With this type of roasting, shiny black beans with an oily surface are obtained. With a darker roast, coffee drinks with less acidity are obtained. Dark roast styles range from slightly dark to completely dark.
